Thanks to the 7” capacitive touch screen, you can easily manage all the functions
of the blast chiller.

BLAST CHILLING AND FREEZING
The blast chilling and freezing system allows you to keep foods in perfect condition
much longer and drastically reduces the repetition of the same preparations, thus
increasing production efficiency.
Blast chilling food allows you to preserve its freshness, quality, nutritional properties,
colours and fragrance.
The blast chilling technique extends the life of food up to 4 times that of a standard
preservation, avoiding the formation of large ice crystals, reducing waste in
a significant way, and making raw materials and ready dishes available at the right
time and with the quality of express cuisine.

LOW-TEMPERATURE COOKING
Enhancing the organoleptic qualities of raw materials
Meat, fish, vegetables: the dishes will be enhanced with low-temperature cooking. A technique for the preservation of the flavours, colours, and consistency of the dishes, which, thanks to the slow and non-aggressive cooking, gives surprising results.

Night cooking/blast chilling cycle

OPTIMIZING TIME, SAFEGUARDING QUALITY
The cold cycle is a fundamental ally in the preparation of desserts.
Indispensable for cooling semi-finished products such as creams
or sponge cakes, it is also ideal for semifreddi and ice-cream pies that
reach the freezing temperature without the formation of ice crystals.
Compared to traditional tools, Nortech technology allows you
to quickly cool finished or processing pastry products, dramatically
reducing preparation times.

FISH SANITATION
RAW FISH: SAFETY AND QUALITY 100% GUARANTEED
The Nortech automatic fish sanitizing cycle rigorously respects the rigid HACCP
parameters. It ensures that the product intended for raw consumption is brought to
-20 ˚C and maintained at such a temperature for at least 24 hours thanks to the use
of core probes that ensure stability and constant temperature throughout the period.
Nortech therefore allows you to work in maximum safety with delicate raw materials
such as raw fish, eliminating any parasites.

ICE-CREAM HARDENING
THE PERFECT ICE CREAM
Nortech is also dedicated to ice-cream hardening.
With the automatic blast chilling cycle, you will be able to serve your ice cream by rapidly bringing it at an ideal temperature of -12 ˚C, keeping the volumes and without compromising quality and consistency. Alternatively, you will be able to rapidly bring your product at a temperature of -18 ˚C, ensuring its optimal preservation.

LEAVENING AND RETARDER PROOVER FOR BAKERY
Enhancing natural leavening
Offering fresh bread with optimal consistency and high digestibility, enhancing traditional recipes, has never been easier. 
Thanks to the leavening cycle, the Chef has the possibility to set the ideal temperature and humidity to enhance the natural leavening, leaving to Nortech Plus the task to maintain the perfect conditions throughout the process and obtain a highly digestible dough with low yeast content.
