DRYING CABINET PLUS SALAMI AND CHEESE MATURATION ZERNIKE KLIMA
Zernike has patented Klima , the professional refrigerated maturing cabinet, to produce healthy and natural cured meats and cheeses, without preservatives or additives. Focused on the maximum performance, even in small spaces, we designed special stainless steel bars with hooks, to hang the sausages on. In this way, we are able to best exploit the vertical spaces and to make easier loading and unloading the products. The production with Klima is very flexible: you can mature products with different aging times, without interrupting the production chain.
It is essential to assure constant standards of hygiene, especially in case of long production, that's why each part of Klima is removable and dishwasher safe. Moreover, our maturing cabinet is equipped with an automatic and programmable air recycling system, to avoid food to be damaged by fermentation gas or mold. A stream of air keeps constant at the selected temperature the microclimate into the maturing cabinet. This allows an indirect and uniform drying, not just frontal, consequently avoiding to be obliged to move periodically the products. Thanks to the electronic control system, Klima is easy to set up and to check all the steps of ageing process. Once ready, cured meat, salami and cheeses can be finished and exposed in our preserving cabinet.
