Thanks to the innovative "cascade" cycle feature with the 4 heart probes, Nortech allows you to simultaneously blast chill various types of food.
Attributing a different target temperature to each probe installed, Nortech allows you to simultaneously work on products that require different temperatures.
VENTILATION DURING BLAST CHILLING
Ventilation accelerates and optimizes the blast chilling process by uniformly circulating the cold air in the cavity while entirely wrapping the product.

BLAST CHILLING AND FREEZING
The blast chilling and freezing system allows you to keep foods in perfect condition
much longer and drastically reduces the repetition of the same preparations, thus
increasing production efficiency.
Blast chilling food allows you to preserve its freshness, quality, nutritional properties,
colours and fragrance.
The blast chilling technique extends the life of food up to 4 times that of a standard
preservation, avoiding the formation of large ice crystals, reducing waste in
a significant way, and making raw materials and ready dishes available at the right
time and with the quality of express cuisine.

to quickly cool finished or processing pastry products, dramatically
reducing preparation times.
FISH SANITATION
RAW FISH: SAFETY AND QUALITY 100% GUARANTEED
The Nortech automatic fish sanitizing cycle rigorously respects the rigid HACCP
parameters. It ensures that the product intended for raw consumption is brought to
-20 ˚C and maintained at such a temperature for at least 24 hours thanks to the use
of core probes that ensure stability and constant temperature throughout the period.
Nortech therefore allows you to work in maximum safety with delicate raw materials
such as raw fish, eliminating any parasites.
GELATERIA: ICE-CREAM HARDENING
THE PERFECT ICE CREAM
Nortech is also dedicated to ice-cream hardening.
With the automatic blast chilling cycle, you will be able to serve your ice cream by rapidly bringing it at an ideal temperature of -12 ˚C, keeping the volumes and without compromising quality and consistency. Alternatively, you will be able to rapidly bring your product at a temperature of -18 ˚C, ensuring its optimal preservation.
