Heated vertical vacuum cutter - MARMELLATE PRODUCTION

DSF 40-70-90-120 represent the complete Nilma heated vertical vacuum cutter range. Extremely versatile, they have large purpose in centralized kitchens, gastronomic laboratories and food industries. The main advantage of Speedy Cutter DSF application is the versatility, because it allows several preparation and cooking food-processes with one machine, in addition to manpower and time saving.

The Speedy Cutter DSF blends, crumbles, homogenizes with adjustable speed many products, such as: cheese, meat, eggs, vegetables, fresh and dry fruit. It kneads, mixes and whips mayonnaise, pesto sauce, bakery products and so on. It melts, heats, cooks and cools (optional), according to the Cook&Chill standards: sauces, creams, pâté, velvet sauce, Bolognese sauce, purée, béchamel, cheese and chocolate. Finally, it can also cook under vacuum: sauces, jams, conserves... in few minutes, maintaining unchanged the organoleptic and nourishing characteristics of the products, intensifying color, taste and presentation of the product.

Entirely manufactured in AISI 304 stainless steel, the Speedy Cutter DSF machines are equipped with: loading bowl with a capacity of 40, 70, 90 or 120 liters; baffle for product conveying, electric or steam heating; direct steam injector on the product (melting machine); vacuum system. The motor, strong and reliable, suitable for an intensive use, is equipped with an electric brake for blades stopping. The stainless steel serrated knife-group, can have smooth blades (standard), or jagged blades, according to the preparation to be executed. The lid is equipped with a quick opening. The bowl tilting for the product unloading is automatic. The control system allows the setting of the product temperature, assuring a perfect cooking result. The bigger models, DSF 90-120, suitable for big productions of more than one ton/hour, are equipped with a discharging valve on the bowl to allow the automatic extraction and the consecutive forwarding to the packing of the finished product.
